Panera’s Secret Low Carb Menu

Posted on February 25, 2013October 9, 2014 by BJJ Caveman

Friend of mine sent me this link a while ago detailing Panera’s secret bread-free menu.  It actually looks pretty good considering the restaurant that’s offering it.  My only concern is that there isn’t enough fat!  There’s a lot of lean cuts of meat and egg whites as protein sources.

I guess if you were forced to eat there this would be the best option…

The positive take home point is that they recognize there is a market for people who are low carb, which tells me that it’s becoming more and more main stream.… Read More

Low Carb and Teeth

Posted on February 24, 2013October 9, 2014 by BJJ Caveman

teethWoke up to read this article in NPR (Mark’s Daily Apple also linked to the same research on today’s post) about how our modern diet that is high in processed foods and carbohydrates has actually lead to worsened oral hygiene, despite all the modern advancements in mouthwash, tooth paste, toothbrushes, flossing, etc…

Turns out the modern diet promotes the growth of bad bacteria in our mouths (which is also considered part of our digestive system) as well as in our intestines… and these bad bacteria cause cavities and other problems with our teeth.… Read More

Days 61-68 – Nutritional Ketosis

Posted on February 23, 2013October 9, 2014 by BJJ Caveman

utahI spent this week in Park City, Utah snowboarding with a good friend of mine.  I was interested to see how nutritional ketosis affected my performance on the slopes!  I’d characterize my self as a beginning intermediate level snowboarder.  I can heel and toe edge on the board pretty comfortably but I still get nervous at high speeds and I don’t do any jumps or tricks.  I’m content just going up and down and taking in the scenery.  Until this trip, I hadn’t boarded in about 2 years so I was definitely rusty.… Read More

First 60 Days of Nutritional Ketosis

Posted on February 20, 2013February 18, 2015 by BJJ Caveman

BJJI officially started my n=1 experiment on nutritional ketosis on 12/12/2012 (you can read about why I started it here), and I wanted to write a summary about my experiences and what I’ve learned after completing my first 60 days.

60 days weight

I weighed 180.0 lbs on day 1, 12/12/2012 and on day 60, I weighed 179.2 lbs, for a loss of 0.8 lbs!  I know, not very impressive but I do feel that my body composition improved over all.  I started receiving more compliments from people who thought that I lost more weight, and I noticed that my body started having a little more definition.  … Read More

Mauricio Costa, Rickson Gracie Black Belt

Posted on February 19, 2013February 19, 2013 by BJJ Caveman

Mauricio CostaI was organizing the contacts in my cell phone a few weeks ago and came across the contact info for my first BJJ instructor, Mauricio Costa.  I first met him over 10 years ago when I first became interested in BJJ.  At the time he was a brown belt under Rickson Gracie, who at the time, and probably currently still is the most respected and skilled Gracie practicioner.  In the BJJ community he’s regarded almost mythically and conferred a god-like status, with a reported undefeated record of over 400 – 0.  … Read More

Why I Decided To Try Nutritional Ketosis

Posted on February 18, 2013October 9, 2014 by BJJ Caveman

PerformanceI’ve always been on the heavier side and struggling with my weight was the norm for me.  While I wouldn’t have called myself morbidly obese or anything, I would say that I was doughy with a good amount of ‘spare tire’ and ‘love handles’ with an estimated body fat percentage of around 30%.  I am 5’9″ and at my heaviest weighed around 215 lbs.  I managed to lower my weight to around 200 lbs using a lot of caloric restriction which left me hungry and unsatisfied most of the time.  … Read More
